Malvasia and Trebbiano reign supreme here. These grapes, when harvested, are often laid out on straw mats to dry, concentrating their sugars and flavors. The DOC Vin Santo del Chianti Classico, located in the Tuscany wine region, covers the whole of the municipalities of Greve in Chianti, Castellina in Chianti, Radda in Chianti, Gaiole in Chianti, as well as part of the municipalities of San Casciano Val di Pesa and Tavarnelle.

The climate of the region is continental. Winters are cold, with temperatures below four °C, while summers are dry and hot, with temperatures often exceeding 35°C. This region has an average annual rainfall of between 800 and 900 mm, with a higher concentration between late autumn and spring.

Regarding the soil of this wine region, it is made up of clayey shales mixed with limestone sandstones. In addition,  it is usually shallow and brownish.

Vin Santo, a masterpiece born from a minimum blend of 60% Malvasia Bianca di Candia, Malvasia Bianca Lunga, and/or Trebbiano Toscano, along with other authorized grape varieties, pays homage to the region's rich heritage. The grapes are carefully selected and left to dry on straw mats, a process known as appassimento, intensifying their flavors and sugars. After a patient maturation period, the result is a golden nectar with alluring aromas of dried fruits, honey, and nuts. Vin Santo's luscious sweetness and vibrant acidity harmonize in each sip, making it a perfect companion to desserts or moments of indulgence.

Vin Santo Occhio di Pernice, an esteemed relative, takes center stage with a minimum of 80% Sangiovese, the emblematic grape of the Chianti Classico region. Complemented by other authorized grape varieties, this wine offers a unique twist. Its name, which translates to "eye of the partridge," hints at its captivating hue reminiscent of a partridge's eye. The grapes are carefully vinified and aged, resulting in a wine of exceptional depth, grace, and complexity. Vin Santo Occhio di Pernice unfolds with notes of red berries, dried fruits, and subtle spices, offering a sensory journey that marries elegance with tradition.
